Created using the same techniques and ingredients as traditional French Vacherin, it makes for the most unique gift you can't find anywhere else. Inspired by the works of French-born chef Michel Richard, former owner of the restaurant Citrus in Los Angeles and Citronelle and Central in Washington, D.C., this dessert is brought back to life thanks to our Executive Chef Mark Courseille.
Chef Courseille is from Bordeaux, France, and trained with Michel Richard at Citronelle, one of the U.S. top ten fine dining restaurants while chef Michael Richard was still alive. Prior to that, Chef Courseille career began early on where he worked at Yannick Cam at Le Paradou in Washington, DC, and at Le Saint-James (Relais & Chateaux) in Bouliac, France. Chef Courseille has cooked at the James Beard House in Manhattan, and at some of the finest private homes and event spaces in Washington, DC including the French Embassy.
